Juicy and irresistible roasted Chester chicken

Juicy and irresistible roasted Chester chicken

Roasted Chester is a classic of Brazilian celebrations, perfect when you want a hearty meal with little effort. It comes from a tradition of gathering the family around the table, with juicy meat and golden skin. The flavor is tender and lightly aromatic, with that mix of simple seasonings that makes everything irresistible. The highlight here is being able to make everything in a single roasting pan, which makes the recipe practical and wonderfully comforting.
In this version we use pantry ingredients that come together to create rich flavor and texture. The whole Chester is the heart of the dish, while butter and olive oil form the base that helps the skin turn golden and the meat stay juicy. Garlic, salt, black pepper, and a pinch of paprika add seasoning and color; dried herbs like rosemary and thyme bring aroma. A touch of lemon adds freshness and balance. Onions, potatoes, and carrots go in the same pan and absorb the Chester’s juices, turning soft and flavorful. A little chicken bouillon powder enhances the umami and helps turn everything into a warm, fragrant, and comforting combination.

Ingredients

  • 1 whole Chester (3–4 kg)
  • 150 g butter, at room temperature
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 teaspoons salt (adjust to taste)
  • 1 teaspoon ground black pepper
  • 1 tablespoon sweet paprika
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 lemon (zest and juice)
  • 2 large onions, quartered
  • 1.5 kg potatoes, cut into medium pieces
  • 4 carrots, cut into thick slices
  • 1 tablespoon chicken bouillon powder
  • 250 ml warm water
  • Optional: chopped parsley to serve

Consult the TACO Food Composition Table for detailed nutritional values of the ingredients.

Instructions

  • Preheat the oven to 200 °C (390 °F).
  • Mix the butter, olive oil, garlic, salt, pepper, paprika, rosemary, thyme, and lemon zest until a paste forms.
  • Carefully loosen the skin over the Chester’s breast and spread half the butter mixture under the skin. Rub the rest all over the surface. Squeeze the lemon juice inside the cavity and place the rind inside.
  • Tie the Chester’s legs together or secure with toothpicks to keep it compact.
  • In a large roasting pan, place the onions, potatoes, and carrots. Sprinkle with a little salt, drizzle with 1 tablespoon of olive oil, and toss. Pour the chicken bouillon powder dissolved in warm water over the vegetables.
  • Place the Chester on top of the vegetables, breast side up. Drizzle with a little of the liquid from the pan.
  • Roast at 200 °C for 30 minutes to brown. Then reduce to 180 °C (355 °F) and roast for another 90–120 minutes (1h30–2h), depending on the size. Baste the Chester with the pan juices every 30 minutes.
  • Check for doneness: the juices should run clear when pierced between the thigh and body, or the internal temperature should be about 75 °C (165 °F) at the thickest point. For official guidance, consult the Safe Minimum Internal Temperatures for Poultry.
  • Remove from the oven and let rest for 15–20 minutes before carving. Serve with the roasted vegetables and, if desired, sprinkle with parsley.

Times may vary depending on the oven. Adjust salt to your taste.
A little about the ingredients:

  • Chester is a good source of lean protein and supports muscle recovery and growth.
  • Garlic, onion, and herbs contain compounds that add flavor and may help protect against inflammation.
  • Potato and carrot provide fiber and vitamins; carrot is especially rich in beta-carotene (vitamin A).
  • Olive oil is a healthier fat and butter helps with browning and flavor. Using both in moderation is a good idea. Consult the Dietary Guide for the Brazilian Population for recommendations on fat use and balanced eating.

Yield and occasions:

  • Makes about 8 to 10 servings, depending on appetite.
  • Great for parties, family lunches, holidays, and special Sundays — including year-end celebrations, when Christmas recipes shine at the table.
