  • 2 tablespoons of fresh herbs, chopped

Instructions

  • Wash, peel, and cut the potatoes into medium pieces. Place them in a large pot with water and a pinch of salt. Cook until tender (20–25 minutes). Drain the water, return the potatoes to the pot, and mash with butter and milk until a creamy mash forms. Set the mash aside in the pot (or transfer to a clean plate if you need the space).
  • In the same pot, heat the oil over medium heat. Add the onion and sauté until translucent (2–3 minutes). Add the garlic and sauté for another 1 minute.
  • Add the chopped tomatoes or tomato paste, season with salt and pepper. Mix well and cook for another 5 minutes, until the sauce reduces slightly. Taste and adjust the salt.
  • Spread the hot meat across the base of the pot (or keep it in the same pot if there is room). Cover the meat with the mash, smoothing it out with a spoon to make it even.
  • Spread the grated cheese on top or spoon the requeijão over it. Cover the pot and cook over low heat for 5 minutes, just until the cheese melts and everything is hot.
